DAY 18: Pecan Tartlets
PASTRY:
2 cups all-purpose flour — unsifted
1 cup butter — softened
6 ounces cream cheese — softened
1/2 teaspoon salt
FILLING:
2 medium egg — slightly beaten
1 cup dark corn syrup
2/3 cup packed brown sugar
4 tablespoons melted butter
2 teaspoons vanilla
2 pinches salt
2 cups pecans — coarsely chopped
PASTRY: In a large bowl, blend together all ingredients until blended and dough forms a ball. Divide into 48 small balls and press with a floured finger into ungreased mini muffin pans, being careful not to let sides show over the top of the pan (if dough becomes too soft, chill slightly).
FILLING: Combine egg, sugar, syrup, butter, vanilla and salt together until well blended. Stir in pecans. Spoon carefully into pastry and fill 3/4 full. Do not spill on exposed top of pastry. Bake at 350° for 25-30 minutes or till filling is set at the edges and center is still soft. Cool pan on wire rack. When cool, loosen edges and remove from pan carefully.
