Day 9: Peanut Butter Chip Chocolate Cookies
1 cup butter
1 1/2 cups sugar
2 medium eggs
2 teaspoons vanilla
2 cups flour — unsifted
2/3 cup cocoa powder
3/4 teaspoon baking soda
2 cups peanut butter chips — (I like Reeses, 12 oz.)
Cream butter or margarine, sugar, eggs, and vanilla until light and fluffy.
Combine flour, cocoa, baking soda, and salt; add to creamed mixture. Stir in peanut butter chips.
Chill until firm enough to handle. Shape small amounts of dough into 1-inch balls. Place on ungreased baking sheets and flatten slightly with a fork.
Bake at 350 degrees for 8-10 minutes.
