Sugar-Free Orange-Pineapple- Sour Cream Cake

(If you have a favorite sugar- free cake recipe,  just add the ingredients and bake.  You can use your own cake recipe or Pillsbury has a yellow sugar-free cake mix.)

1 box of sugar-free cake mix- yellow

1 large can of Libby’s Skinny Fruit crushed pineapple

1 large box of sugar-free orange Jell-O

3 eggs

1/3 cup oil

I used about a cup of pineapple and juice in the batter

1/4 cup water

2 heaping Tablespoons of sour cream


Preheat oven to 325 degrees. In a 9×13-inch cake pan, line with parchment paper and lightly spray with Pam (or whatever you use). Whisk together the Jell-o and cake mix while dry; then add the rest of the ingredients and beat with a mixer for about 2 minutes and well mixed!

Pour into the cake pan and bake for 32-36 minutes. This is according to how long it takes to bake a cake in your oven. I then let it cool and you can also make your own sugar free icing if you have a recipe or Pillsbury has a sugar free Cake Frosting…. After the cake cools completely, ice the cake.


** it turned out awesome and still just as fresh today as when I took it out of the oven! The orange and pineapple mixed together was just right! Hope you enjoy it~
